This chocolate is long in the mouth, with vegetal and cocoa flavors and a touch of astringency.The name Carenero was given to this cocoa because of whose port the beans were formerly shipped. Today, it still grows in the vicinity, in the state of Sucre, in the north of the country. These beans are hybrids of Criollo-Trinitario of Barlovento. They are collected by small planters who ferment and dry them individually.
